A breakdown of particulate integrity can be an issue when cooking using traditional methods.  With Jet Cook™, pie fillings with a high meat content such as steak or chicken are cooked to an incredibly high quality, in reduced processing times and with increased visible meat appearance, texture and flavour.

Onions can also be cooked off, caramelised, sautéed and steak seared using DCN’s Braising Bar, another of our patented technologies.  This both seals in the moisture and gives it more structure, thus reducing break-down during the cooking and increasing the average weight of the meat pieces giving it a more succulent flavour.

Fillings such as cheese and onion and vegetable are also cooked with a dramatically reduced processing time and improved texture and flavour.

We can also produce high quality Fruit Fillings due to the rapid heating and gentle cooking of Jet Cook™ Steam Infusion.  Benefits include improved colour, flavour and texture.
